Khichidi

Ingredients

  • 2 cups of rice
  • 1 cup of pesara pappu
  • 1 cup of chopped frozen vegetables: green beans, carrots, peas
  • 3 tbsp butter
  • 1 cup grated cocunut
  • 1 tbsp corriander seeds (dhaniya)
  • 1 tbsp cumin seeds (jeelakarra)
  • 3 dry red chillies
  • 2 cloves garlic
  • 2 tbsp ginger
  • 1 tsp turmeric
  • Salt to taste
  • Fresh coriander leaves (kotthimeera) to garnish


Method:

  • Start cooking the rice with pesara pappu , add 1 tsp turmeric and salt to taste.
  • Heat 1 tbsp butter and fry cumin seeds, coriander seeds and dry red chilles, ginger and garlic. Set aside to cool, and grind with grated cocunut to make a masala.
  • Heat oil in a frying pan and add chopped carrots, beans and peas, fry for few mins and then add masala and fry for some more time.
  • Add this masala and vegetables mix to the partially cooked rice and pappu, and close lid till done.
  • Garnish with fresh coriander leaves and serve hot!
